Shotoh 130mm Miyabi 6000mct
The Shotoh, like its western counter part the paring knife is ideal for precision cutting and scoring meat, fish and poultry. Its short, light, ultra thin blade gives you complete control as if it is an add-on to your hand, perfect for pealing and finely slicing vegetables and fruit. The classic curved shape with a sharp tip makes it perfect for very detailed work and comes in helpful when creating ornate garnishes.
Taking on the Miyabi’s classic Japanese construction the blade is composed of a MicroCarbide MC 63 core wrapped in two further layers of steel to create a hammer-dimpled cladding. It has an authentic, symmetrical Japanese blade that has undergone a 3-stage process of Honbazuke honing to create an extremely sharp edge, finished with a comfortable oval cocobolo pakkawood handle, trimmed with a Miyabi logo pin.
