The Shotoh 130mm MIYABI 5000 MCD has a thin profile and a centred balanced tip making easy work of every day tasks like peeling and cutting vegetables and fruit. The scalpel-like sharpness of this blade makes it ideal for preparing elaborate garnish to sit upon or along side exquisite dishes. The Shotoh is also a perfect tool for minor trimming or the larding of large cuts of meat prior cooking.
An advanced core material (CMV60) coated in 100 layers of beautifully hand crafted damascus steel makes this knife stand out for its durability, resistance to shattering and elegance.
