SANIMARU TAOKBIKI 270 MIYABI 600 PRO
The SANIMARU TAOKBIKI is a long, thin knife used mainly to slice straight-cut sashimi. The length gives this knife the ability to slice through ingredients in long uninterrupted strokes, preserving both the integrity and freshness of the fish. The thin body allows cutting thinner slices of sashimi easier than the yanagiba of this range, due to the a less broad blade and slightly steeper angle of the edge.
As with all 600pro’s this knife undergoes Zwilling J.A. Henckels advance hardening process to create a reliable and lasting blade. The Western style handle is the joining between Japanese tradition and the West, made out of a plastic resin it ensures high standards in hygiene and health, and food safety. The triple rivet handle encloses a full tang for increase balance and leverage, whilst the design is completely ergonomic and ambidextrous.
The blades rounded tip and balance helps when trying to cut difficult ingredients such as octopus, which is in fact where the name Taokbiki derives from. This style of blade takes its origins from Kanto, Tokyo. It is also noted that the flatter blade of the takobiki helped make cutting easier while the user and board were at the same height historically when Kanto chefs cut while seated.
