Toishi Pro, a range of synthetic ceramic whetstones designed exclusively for use with Miyabi blades, feature sharpening stones in grits from #400 (for serious damage), #1000 (for smoothing) to #5000 (for buffing and polishing). Toishi Pro was inspired by the premium-class Chosera series produced by Naniwa – a firm favourite among world-class sushi chefs!

Non-absorbent and well bonded, Toishi Pro Sharpening Stones are exceptionally hard-wearing, and the only series designed to protect the true Honbazuke honing of Miyabi blades. An ancient sharpening technique developed by master craftsmen, Honbazuke guarantees a “true edge” and a clean cut – every time!

With its rectangular shape, and mid-to-fine grit, the Toishi Pro #5000 allows ease of use and quick results, with next to no effort. #5000 medium-grit stones are particularly recommended for domestic cooks and novice chefs, who only need carry out basic, regular maintenance. Measuring just 210 x 70 x 25 mm, the #5000 Sharpening Stone is an ideal size for counter-top storage, however, can also be housed atop the Hinoki wood whetstone base, included in the Miyabi Basic Sharpening Kit!
